Gingered Turnips

Gingered Turnips Recipe simmers yellow turnips in a broth beef stock, onions, ground ginger, sugar and soy sauce until tender then fluffing with mixer adding cooking fluid to desired consistency.

INGREDIENTS

2 pounds yellow turnips,
pared and cubed
|
1 tablespoon minced onion
|
1 1/4 cups beef stock
|
1/2 teaspoon ground ginger
|
1/2 teaspoon sugar
|
2 teaspoons soy sauce
|

|
|

|
DIRECTIONS
|
1:
Combine all ingredients in a saucepan; simmer covered until turnips are tender (about 15 minutes). Drain; mash turnips with potato masher or electric mixer until fluffy; adding cooking liquid as needed for desired consistency.
