Zucchini Parmesan Recipe stir fries zucchini, garlic, onion, parsley, salt, pepper, oregano, rosemary and tomatoes and then sprinkles with Parmesan cheese to create this wonderful zucchini recipe.


INGREDIENTS
2 tablespoons cooking oil
1 small clove garlic, minced
4 medium zucchini, thinly sliced
1/3 cup coarsely chopped onion
1 tablespoon chopped parsley
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon rosemary
2 cups chopped peeled tomatoes
1/4 cup grated Parmesan cheese (optional)


DIRECTIONS
1: Heat oil in a large wok or skillet. Add garlic and stir-fry about 1 minute. Stir in zucchini, onion, and parsley. Sprinkle with a mixture of salt, pepper, oregano, and rosemary. Stir together and cover.
 
2: Heat about 5 minutes over medium heat.
 
3: Stir in tomatoes and cook, uncovered, 1 to 2 minutes, or until tomatoes are thoroughly heated.
 
4: Turn mixture into a serving dish and sprinkle with cheese.
