Zucchini Parmesan

Zucchini Parmesan Recipe stir fries zucchini, garlic, onion, parsley, salt, pepper, oregano, rosemary and tomatoes and then sprinkles with Parmesan cheese to create this wonderful zucchini recipe.

INGREDIENTS
|
2 tablespoons cooking oil
|
1 small clove garlic, minced
|
4 medium zucchini, thinly
sliced
|
1/3 cup coarsely chopped onion
|
1 tablespoon chopped parsley
|
1 teaspoon salt
|
1/8 teaspoon pepper
|
1/4 teaspoon oregano
|
1/4 teaspoon rosemary
|
2 cups chopped peeled tomatoes
|
1/4 cup grated Parmesan cheese (optional)
|
|
|
|
|
|
|
|
|
|
DIRECTIONS
|
1:
Heat oil in a large wok or skillet. Add garlic and stir-fry about 1 minute. Stir in zucchini, onion, and parsley. Sprinkle with
a mixture of salt, pepper, oregano, and rosemary. Stir together and cover.

Heat about 5 minutes over medium heat.

Stir in
tomatoes and cook, uncovered, 1 to 2 minutes, or until tomatoes are thoroughly heated.

Turn mixture into a serving dish and sprinkle with cheese.
