Rompope Recipe slowly simmers milk, sugar, stick cinnamon, ground almonds, vanilla extract and egg yolks before adding light rum to mix this very tasty beverage recipe.

INGREDIENTS
|
1 quart milk
|
1 cup sugar
|
1 stick cinnamon
|
1/4 cup finely ground
almonds
|
1 teaspoon vanilla extract
|
8 egg yolks
|
1 cup light rum, brandy, or
grain alcohol
|

DIRECTIONS
|
1:
Put milk, sugar, and cinnamon stick into a saucepan.
Heat to simmering, and simmer gently, stirring constantly,
about 10 minutes.

Remove from heat and remove cinnamon stick. Add
almonds and vanilla extract.
|

3:
Beat egg yolks until thick and lemon-colored. Gradually
beat into milk. Return to heat and cook over low heat, stirring
constantly, until mixture coats a spoon. Cool to room
temperature.

Mix in rum and pour into a large bottle with screw lid.
Refrigerate until ready to serve.
