Eggs, cream, and sharp American Cheddar cheese bake to golden richness in these tiny cocktail tarts. Garnish with a sprinkling of chopped chives and serve with light red wine.

INGREDIENTS
|
Pâte Brisée, chilled - search recipes
|
1/2 pound sharp American Cheddar cheese
|
4 eggs, lightly beaten
|
1 cup each whipping cream and half-and-half
|
Salt and freshly ground black pepper to taste
|
Nutmeg and cayenne pepper to taste
|
1/4 cup chopped chives
|

DIRECTIONS
|

Preheat oven to 350°F. Use Pâte Brisée to line 24 two-inch tartlet tins. Chill 30 minutes.

Cut cheese into 1/8-inch cubes. In a small bowl combine eggs, whipping cream, half-and-half, and salt, black pepper, nutmeg, and cayenne to taste.

Divide cheese cubes among tartlet shells and top with cream mixture. Bake tartlets until well browned (12 to 15 minutes). Cool slightly, then garnish with chopped chives.
