American Cheddar Tartlets

Eggs, cream, and sharp American Cheddar cheese bake to golden richness in these tiny cocktail tarts. Garnish with a sprinkling of chopped chives and serve with light red wine.


INGREDIENTS
Pâte Brisée, chilled - search recipes
1/2 pound sharp American Cheddar cheese
4 eggs, lightly beaten
1 cup each whipping cream and half-and-half
Salt and freshly ground black pepper to taste
Nutmeg and cayenne pepper to taste
1/4 cup chopped chives


DIRECTIONS
1: Preheat oven to 350°F. Use Pâte Brisée to line 24 two-inch tartlet tins. Chill 30 minutes.
 
2: Cut cheese into 1/8-inch cubes. In a small bowl combine eggs, whipping cream, half-and-half, and salt, black pepper, nutmeg, and cayenne to taste.
 
3: Divide cheese cubes among tartlet shells and top with cream mixture. Bake tartlets until well browned (12 to 15 minutes). Cool slightly, then garnish with chopped chives.
