Broiled Fish Quenelles Recipe is a very tasty fish appetizer which uses fish fillets, chopped onion and carrot, vegetable oil, salt, matzo meal or white cornmeal and watercress to create this tasty appetizer.

INGREDIENTS
|
2 pounds skinned fish fillets (all trout or a combination of trout, whitefish, or pike)
|
1/2 cup chopped onion
|
1/3 cup chopped carrot
|
1 egg, beaten
|
2 teaspoons vegetable oil
|
1 1/2 teaspoons salt
|
1 1/2 teaspoons matzo meal or
white cornmeal
|
3 tablespoons ice water
|
Watercress
|
|
|

|
|
|

DIRECTIONS
|
1:
Place all ingredients except 1 tablespoon of the ice water and watercress in a blender or food processor; puree until the consistency of a paste. Add remaining ice water if
necessary (mixture should hold together and be easy to handle).

Form fish mixture into oval patties, using 1/2 cup for each. Place on a lightly oiled cookie sheet.

Broil 4 inches from heat until patties are well browned and slightly puffed (8 to 10 minutes on each side). Serve immediately. Garnish with watercress.
