Fried Chicken Gizzards Recipe

Fried Chicken Gizzards Recipe coats chicken gizzards with House Autry™ Chicken Breader and fries them in vegetable oil to create this delicious chicken gizzard recipe.
INGREDIENTS
1 lb. chicken gizzards
1 cup House Autry™ Chicken Breader
Vegetable oil for frying
DIRECTIONS
Place enough vegetable oil into a heavy bottom deep pot to prevent the gizzards from touching the bottom of the pot once the gizzards are added to the oil. Heat the oil to 350°F. Use of a candy thermometer is ideal to have continuous readout of oil temperature.
Place the chicken breader into a plastic or paper bag.
Place the gizzards into the bag of breader, pinch off the opening of the bag to close and shake the gizzards around in the breader. Coat the gizzards well so all areas of the gizzards are coated with the breader. Remove the gizzards from the bag shaking off excess breader and place the gizzards onto a plate.
Take a handful of the gizzards and carefully and slowly place the gizzards into the hot oil. Repeat until all of the gizzards are in the oil. Use a large slotted spoon and move the gizzards around in the oil to prevent sticking together. NOTE: If you can maintain the oil at 350°F, cook the gizzards for 3 minutes 15 seconds and remove from the pot. If your oil temperature drops to the 325°F range, cook the gizzards for around 4 minutes or so, depending on how low the temperature drops. Once done, remove the gizzards to a servicing dish lined with paper towels. Serve.
