Pasta with Tomatoes and Goat's Cheese

Pasta with Tomatoes and Goat's Cheese Recipe roasts tomatoes to bring out their sweetness while cooking dried rigatoni then combines both with goat's cheese and garlic-infused olive oil to create this delicious pasta recipe.
INGREDIENTS
8 large ripe tomatoes
4 cups dried rigatoni
7 oz. firm goat's cheese, crumbled
4 tbsp garlic-infused olive oil
salt and ground black pepper
DIRECTIONS
Preheat the oven to 375°F. Place the tomatoes in a roasting pan and drizzle over 2 tbsp of the oil. Season well with salt and pepper and roast for 20 to 25 minutes, or until soft and slightly charred.
Meanwhile, cook the pasta in a large pan of lightly salted boiling water for 10 to 12 minutes. Drain well and return to the pan.
Roughly mash the tomatoes with a fork, and stir the contents of the roasting pan into the pasta. Gently stir in the goat's cheese and the remaining oil and serve.
