by:    Carrie Ward

Warm Parsley Sauce Recipe combines and cooks whipping cream, parsley leaves, white wine, shallots, butter and salt and pepper to create this tasty parsley sauce recipe.

INGREDIENTS
4 cups parsley, leafy part only
2 cups whipping cream
2 shallots, minced
1/2 cup dry white wine
1/4 cup cold butter, cut into 4 pieces
Salt and pepper

DIRECTIONS
1: Blanch parsley in boiling water 20 seconds; drain and transfer to a bowl of ice water to stop the cooking and set the color. Drain and dry thoroughly on paper towels. Chop by hand or in a food processor until almost pureed.

2: In a medium saucepan over high heat, reduce cream by half. In a medium skillet over high heat, cook shallots and wine until wine has almost evaporated. Add the hot reduced cream and whisk well. Remove from heat and whisk in butter, one piece at a time, until it is all incorporated. Add minced parsley and salt and pepper to taste.
