Spinach and Feta Snake Appetizer

Spinach and Feta Snake Appetizer Recipe in the traditional Moroccan dish, bakes onion, feta cheese, eggs, spinach, ground walnuts, ricotta or baker's cheese and butter in filo dough to create this delicious appetizer recipe.

INGREDIENTS
|
1/4 cup olive oil
|
1/2 cup minced onion
|
1/2 pound crumbled feta cheese
|
2 eggs, lightly beaten
|
1 cup cooked chopped spinach, well drained
|
1/3 cup ground walnuts
|
1/2 cup ricotta or baker's cheese
|
Salt and pepper to taste
|
1/2 pound filo dough
|
2 cups melted butter
|

DIRECTIONS
|

Preheat oven to 375° F. In a small skillet over moderate heat, heat oil. Add onions and saute until softened but not browned, about 5 to 6 minutes. Cool slightly.

In a bowl combine cooled onions, feta, eggs, spinach, walnuts, ricotta, salt, and pepper. Stir well with a fork to blend.

Layer three sheets of filo dough, brushing each sheet generously with melted butter. Using a third of the filling, and working from the edge of the filo
closest to you, spread a strip about 1 1/2 inches wide the length of the top sheet. Roll sheets into one long cylinder. Coil cylinder into a snake shape and place
on a baking sheet. Repeat twice, coiling the second snake around the first, and the third snake around the second.
Coils should be closely spaced but not touching.

Brush with remaining butter and bake until golden, about 25 minutes, basting occasionally with butter that drips onto the baking sheet. Cool slightly,
then cut into l-inch chunks to serve, or let guests cut their own chunks off the "snake."
