Fresh Southern Corn Pudding

Fresh Southern Corn Pudding Recipe uses fresh sweet corn right off the cob and marries it with sugar, salt, eggs, butter and milk to make a very tasty corn pudding.

INGREDIENTS
|
2 c. fresh corn, cut from cob
|
2 tsp. sugar
|
1 1/2 tsp. salt
|
3 eggs, lightly beaten
|
2 tbsp. butter or margarine
|
2 c. milk
|

DIRECTIONS
|
1:
Preheat oven to 350 degrees. Combine the corn, sugar, salt and pepper in a bowl.
Add the eggs and mix well.

Add the butter to milk in a saucepan and heat until
butter is melted. Blend with corn mixture.
|
|
3:
Turn into a greased 1-quart casserole
and place in a pan of hot water. Bake for 1 hour or until a knife inserted in
center comes out clean. Garnish with fresh parsley.
