Gingery Fruit Salad

Gingery Fruit Salad Recipe chills sliced peaches and serves on a bed of salad greens with fresh raspberries and blueberries with a dressing of cream cheese, ground ginger, milk and peach juice on the side.
INGREDIENTS
2 cups sliced, peeled fresh peaches or nectarines
1/4 cup sugar
1 teaspoon lemon juice
1 3-ounce package cream cheese, softened
1/2 teaspoon ground ginger
1 to 2 tablespoons milk
3 cups torn mixed salad greens
1 cup chilled fresh raspberries
1/2 cup chilled fresh blueberries
DIRECTIONS
1:
Place peach slices in bowl; toss with sugar and lemon juice. Cover and refrigerate about 1 hour.

Drain peaches, reserving syrup. Cover peach slices and refrigerate.
3:
To prepare dressing, add cream cheese and ginger to reserved syrup; beat till smooth. Stir in milk till dressing is desired consistency. Chill.
4:
Place salad greens in salad bowl. Arrange peach slices, raspberries, and blueberries atop greens. Serve with dressing.
