Arroz de Mexico - Mexican Rice

Arroz de Mexico - Mexican Rice Recipe is a simplified version of the traditional Arroz a la Mexicana using rice, onion, garlic, green chile salsa, chicken broth and cilantro.


INGREDIENTS
3 tablespoons oil
1 cup long-grain rice
1/2 onion, chopped
1 clove garlic, minced
2 cups chicken broth
Fresh cilantro, for garnish (optional)
1 cup mild green chile salsa


DIRECTIONS
1: Heat the oil in a skillet. Add rice and cook over medium heat stirring constantly, until puffed and golden.
 
2: Push the rice to one side, add onion and garlic, and cook until onion is soft. Add salsa and cook briefly, stirring to mix rice with onion/salsa mixture.
 
3: Add chicken broth and bring to a boil. Reduce heat, cover, and simmer until all liquid has been absorbed (about 30 to 35 minutes). Garnish with cilantro, if desired.
