Arroz de Mexico - Mexican Rice

Arroz de Mexico - Mexican Rice Recipe is a simplified version of the traditional Arroz a la Mexicana using rice, onion, garlic, green chile salsa, chicken broth and cilantro.

INGREDIENTS
|
3 tablespoons oil
|
1 cup long-grain rice
|
1/2 onion, chopped
|
1 clove garlic, minced
|
2 cups chicken broth
|
Fresh cilantro, for
garnish (optional)
|
1 cup mild green chile salsa
|
|

|
|
|
|
|
|
|
|

DIRECTIONS
|
1:
Heat the oil in a skillet. Add rice
and cook over medium heat stirring
constantly, until puffed and golden.

Push the rice to one side, add
onion and garlic, and cook until
onion is soft. Add salsa and
cook briefly, stirring to mix rice with
onion/salsa mixture.

Add chicken broth and bring to a
boil. Reduce heat, cover, and simmer
until all liquid has been absorbed
(about 30 to 35 minutes). Garnish
with cilantro, if desired.
