Tortillas de Harina Flour Tortillas
by:    Ned Mitchell

Tortillas de Harina Flour Tortillas Recipe is a variation of the traditional corn tortilla using flour, salt, baking powder, lard or shortening and warm water to create this tasty flour tortillas recipe.

INGREDIENTS
2 cups flour
1 teaspoon salt (scant)
1/2 teaspoon baking powder
1/4 cup lard or shortening
1/2 cup warm water

DIRECTIONS
1: Mix together flour, salt, and baking powder. Cut in the lard and mix well. Gradually add the water, working it in to make a stiff dough. Knead until the dough is springy. Divide the dough into balls of equal size; cover and allow to rest for 20 to 30 minutes.

2: Heat a comal or heavy frying pan over medium-high heat. On a lightly floured board, use a rolling pin to roll each dough ball into a thin Circle approximately 8 inches across.

3: Place the tortilla on the heated, ungreased comal. Bake until speckled with brown (1 1/2 to 2 minutes); turn over and bake until the underside is speckled brown (1 1/2 to 2 minutes). The tortilla may puff up while cooking; if so, press down lightly with a linen towel.

4: Wrap the tortillas together in a kitchen towel as they are made to keep them soft and warm.
