Queso y Cebolla Cheese and Onion Filling Recipe makes a very nice filling for enchiladas and other Mexican dishes using Colby, Jack or Cheddar cheese, olives and onions with this tasty Mexican dish filling recipe.

INGREDIENTS
|
1 pound Colby, jack, or
mild Cheddar cheese, grated
|
2 cans (2 1/4 oz each) sliced
ripe olives
|
1 onion, chopped
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
DIRECTIONS
|
1:
Set aside 1 cup of the grated
cheese.
|
|
2:
Mix together olives and onion. Fill each enchilada by placing a
handful of cheese in the center of the prepared tortilla. Top with a spoonful
of the onion and olive mixture.
Roll and proceed with the enchilada
recipe of your choice.

3:
Top the finished enchiladas with
the 1 cup grated cheese and bake
according to the recipe.
