Puerco Pork Filling

Ground meat used in Puerco Pork Filling Recipe is seldom used in Mexican cuisine; however, this recipe using ground pork, ancho chile, tomato, onion, garlic, green chiles, oregano, cumin and potatoes creates a very tasty pork filling recipe.

INGREDIENTS
|
1 dried ancho chile
|
1/2 cup boiling water
|
1 tomato, chopped
|
1 pound ground pork
|
1 onion, chopped
|
1 clove garlic, minced
|
1 can (4 oz) diced green chiles
or 1 jalapeno, chopped, for a
hotter dish
|
1/2 teaspoon dried oregano
|
1/4 teaspoon ground cumin
|
Salt to taste
|
1 potato, cooked, peeled, and diced
|

DIRECTIONS
|
1:
Remove seeds and veins from the
ancho chile. Wash ancho and soak in
the boiling water for 30 minutes.
Place the ancho, water, and tomato
into a blender or food processor and
puree until smooth.

Crumble pork into a skillet and
cook until browned (about 20 minutes)
over medium high heat.
Add onion and garlic and cook until
soft. Add the diced green chiles, oregano,
and cumin. Stir in the ancho tomato
puree, check the seasoning,
and salt to taste.

Add potato and heat, stirring occasionally,
until the potato is heated
through.
