Mexican Wedding Cookies

|
Mexican Wedding Cookies Recipe makes a cookie dough with flour, confectioner's sugar, finely chopped pecans, salt, vanilla and butter before baking to a golden brown and generously dusting with confectioner's sugar.

INGREDIENTS
|
2 cups flour
|
1 1/3 cups confectioners'
sugar, sifted
|
1 cup finely chopped pecans
|
Pinch salt
|
1 teaspoon vanilla extract
|
1 1/4 cups unsalted butter, softened
|

DIRECTIONS
|
1:
Preheat oven to 350° F. In a
medium bowl combine flour, 2/3 cup
of the sugar, the nuts, and salt. Stir
in vanilla.

Work the butter into the mixture
until it forms a cohesive ball.
|

For each cookie pinch off about
1 1/2 tablespoons dough and form
it into a ball, using either your hands
or two teaspoons. Shape about 1 1/2
tablespoons dough into a ball. Place
balls on a greased baking sheet and
flatten them slightly with a
spoon. Bake until lightly browned,
about 30 minutes.

Allow the cookies to cool on a wire
rack. Dust them generously with
the remaining confectioners' sugar.
