Pina Pineapple Filling

Pina Pineapple Filling Recipe is a very nice filling for Empanadas turnovers and other pastries using pineapple chunks, cornstarch, sugar, sliced almonds and shredded coconut and creates this delicious pastry filling recipe.

INGREDIENTS
|
1 can (20 oz) unsweetened
pineapple chunks
|
2 tablespoons cornstarch
|
3 tablespoons sugar
|
1/2 cup sliced almonds
|
1 cup unsweetened
shredded coconut
|
Sugar to coat
|
|

DIRECTIONS
|
1:
Drain pineapple and reserve
liquid. Cut pineapple chunks in half.
Add water to the reserved liquid to
make 3/4 cup.

2:
In a saucepan combine liquid and
cornstarch; stir to blend. Add sugar
and pineapple chunks; bring to a
boil over medium heat, stirring constantly.
Reduce heat and simmer
until thickened.

3:
Stir in almonds and coconut. Cool.
|
|
4:
Use as a filling for Empanadas. Roll Empanadas in sugar while
still warm.
