DIRECTIONS
|
1:
Place water, salt, sugar, and butter
in a heavy saucepan. Heat slowly
until butter melts, then bring to a
full boil. Add flour all at once, and beat
furiously until the mixture is thick
and smooth. Continue beating over medium heat for about 2 minutes, then remove. Add eggs, one at a time, beating vigorously after each until mixture is smooth. (A hand-held electric beater is useful.) Heat about 2 inches of oil to
390° F.
|
|
2:
Scoop mixture into a large pastry
bag fitted with a 1/2-inch star tip and
fold down top of the bag to seal.
Squeeze bag over the hot oil, pushing
out a rope of paste 4 to 5 inches long.
Cut with a knife, letting rope fall
gently into oil. Rapidly form about 6
more churros the same way. Turn
them frequently until golden, about 2
minutes. Remove with a slotted spoon
and drain on paper towels. .

|
3:
Fry remaining paste the same way,
and while churros are still warm,
toss them in Cinnamon Sugar
