Pizza with Red Onion and Pancetta

Pizza with Red Onion and Pancetta Recipe is flavored by the Italian style bacon that's sliced like salami and uses red onion, pancetta, mozzarella cheese, pecorino, Easy Mix Pizza Dough and fresh tomato sauce to create this pizza recipe.

INGREDIENTS
|
3 tablespoons olive oil
|
1 large (about 10 oz) red
onion, thinly slivered
|
1/4 pound pancetta (round
Italian bacon), cut into
1/2-inch-wide strips
|
3 cups (3/4 lb) shredded
whole-milk mozzarella cheese
|
1/4 cup grated pecorino, Romano,
or Parmesan cheese
|
Easy Mix Pizza Dough (search recipes)
|
Fresh Tomato Sauce (search recipes)
|

DIRECTIONS
|
1:
Prepare Easy-Mix Pizza Dough and
let it rise. While dough rises, make sauce,
then set it aside. Preheat oven to 450° F. Heat oil in a large frying pan over moderate
heat. Add onion and cook, stirring
often, until soft but not browned (8 to
10 minutes). Remove onion with a
slotted spoon and reserve.

Add pancetta to same pan and
cook, stirring often, until it begins to
brown (about 3 minutes). Drain on
paper towels, reserving oil in pan.

Grease two 11x12-inch pizza pans (or a Single 17x18-inch pan). Divide dough into two equal
portions; roll each half out to an 8-
inch Circle (or roll all of the dough
to a 12x14-inch circle). Use
your hands to pat and stretch dough
to fit pans. Brush evenly with oil
remaining in frying pan. Divide sauce over the pizza(s). Sprinkle evenly with cheeses. Arrange onion and pancetta evenly over pizzas
(or large, single pizza).

Bake on lowest rack of oven until
crust browns well (15 to 20 minutes
for small pizzas, 18 to 20 minutes
for large, single pizza). Cut into
wedges or squares and serve at once.
