Cinzia's Basil Pesto

Cinzia's Basil Pesto Recipe combines basil leaves, olive oil, lemon juice, garlic, pine nuts and Parmesan cheese to create a delicious basil pesto which complements almost every dish.


INGREDIENTS
2 cups lightly packed fresh basil leaves
1/4 cup olive oil
1 teaspoon lemon juice
1 clove garlic, minced or pressed
2 tablespoons pine nuts (optional)
2/3 cup grated Parmesan cheese


DIRECTIONS
1: Rinse basil leaves well and pat dry before measuring. In blender or food processor combine oil, lemon juice, and garlic; add basil, pine nuts (if used), and cheese. Whirl or process until pureed.
