INGREDIENTS
3 medium tomatoes (about 1 pound)
2 tablespoons olive oil
1/4 teaspoon dried oregano
1 clove garlic, minced or pressed
1/4 teaspoon salt
1 can (4 oz) diced green chiles

DIRECTIONS
1: Pour boiling water over tomatoes to loosen skins; peel, and chop finely.

2: Heat oil in a 2-quart saucepan over medium heat. Add tomatoes, oregano, garlic, salt, and green chiles. Bring to a boil, cover, reduce heat, and simmer for 15 minutes. Uncover and cook over medium-high heat, stirring often as sauce begins to thicken, until sauce is thick and reduced to about 1 cup (15 to 20 minutes).
