Creole Chicken

Creole Chicken Recipe is a simple and easy creole chicken dish using chicken breast, celery, sliced onion, thyme, green pepper and crushed tomatoes.

INGREDIENTS
|
4 (3oz) skinned, boned chicken breast halves
|
Vegetable cooking spray
|
1/2 cup chopped celery
|
1/3 cup sliced onion
|
1/2 teaspoon salt
|
1/2 teaspoon dried thyme
|
1/8 teaspoon pepper
|
1 medium-size green pepper,
cut into strips
|
1 (16-ounce) can crushed
tomatoes
|

DIRECTIONS
|
1:
Place chicken breasts on rack of a broiler pan coated with cooking
spray. Broil 5 inches from heat 10 minutes or until lightly
browned, turning once.

Combine celery and remaining ingredients in a large nonstick
skillet. Bring mixture to a boil; cover and cook over medium heat
10 minutes.

Add chicken; cover and reduce heat. Simmer 30 minutes or until
chicken is tender.
