Butternut Squash Supreme Recipe

|
Butternut Squash Supreme Recipe uses maple syrup, brown sugar, butter, cinnamon, vanilla extract, salt, nutmeg, onion, garlic, sage, vegetable oil, black pepper and Parmesan cheese in creating this outstanding butternut squash recipe.

INGREDIENTS
|
1 medium sized butternut squash, about 2 to 3 pounds
|
1/4 cups maple syrup
|
1/4 cup brown sugar
|
3 Tbl. butter
|
1/2 tsp. cinnamon
|
1/2 tsp. vanilla extract
|
Pinch of nutmeg, ground
|
1 medium onion, chopped medium
|
1 clove garlic, minced
|
1/2 tsp. sage, rubbed
|
3 Tbl. vegetable oil
|
1/2 tsp. salt
|
1/4 tsp. black pepper, ground
|
1/2 cup Parmesan cheese
|

DIRECTIONS

Peel the squash and cut in half length wise. Scoop out the seeds and discard. Cut both halves of the squash into long sections and then cut the section crosswise into 1 inch pieces.

Preheat oven to 450°F. Place an oven rack about 5 - 6 inches from the broiler and another rack in the middle of the oven. In a large mixing bowl combine all of the other ingredients and mix very well to combine.

Spray the bottom of a rimmed sheet pan with cooking spray or coat with a light layer of vegetable oil. Place the pieces of squash into the bowl with the mixture of ingredients. Toss to coast all the pieces of the squash with some of the mixture.

Spread the squash out on the sheet pan trying to eliminate any touching. Place the sheet pan into the oven on the middle rack. Cook the squash for 20 and then check the firmness of the squash. Return the squash to the oven in 10 minute intervals until the squash is at your desired tenderness. Turn the oven to high broil. Place the sheet pan under the broiler and broil the squash for 3 - 4 minutes. Serve and enjoy.
