Cast Iron Skillet Pizza Recipe

Cast Iron Skillet Pizza Recipe uses bread flour, yeast, olive oil, tomatoes, garlic, salt, sugar, oregano, red pepper flakes, mozzarella and Monterey cheeses in creating this unique and tasty pizza recipe.


INGREDIENTS
11 ounces bread flour
1 tsp salt
1 tsp rapid rise yeast
8 ounces of water
Vegetable oil
3 Tbsp + 1 tsp extra virgin olive oil
For Sauce:
1 14 1/2 ounce can of whole tomatoes with juice
1 garlic clove, grated
1/4 tsp salt
1/4 tsp sugar
1/4 tsp dried oregano
Pinch of red pepper flakes
1 3/4 cup mozzarella cheese, shredded
4 oz Monterey jack cheese, shredded
Pepperoni, optional


DIRECTIONS
1: Place flour, salt, yeast and water (@105°F) into a large bowl and stir to mix well. Knead the dough, in the bowl, until the dough starts to come together. Lightly oil the inside of a large bowl. Place the dough into the bowl and coat top and bottom with oil. Cover and place into the refrigerator for 12 to 24 hours.
 
2: Place bowl with dough on counter to rest at room temperature for 30 minutes. Place 3 Tbsp. of olive oil into a 12-in. cast iron skillet and swirl to coat the bottom and sides of the skillet. Place the dough into the skillet and press outward to about 1/8-in. of the sides of the skillet. Cover with plastic wrap and rest for 1 1/2 hours.
 
3: Place the can of tomatoes with juice into a colander that has been placed over a large bowl and allow the juice to drain into the bowl. Using your hands, break the tomatoes into small pieces allowing the juice to drain into the bowl. Place the tomato into the bowl of a food processor. Add 1 tsp olive oil and the remaining ingredients except the cheese to the bowl. Process until smooth. Heat oven to 400°F. Remove wrap from skillet.
 
4: Place 1/2 cup of the tomato sauce in the middle of the dough. Spread the sauce to within 1/2 inch of the skillet sides all around skillet. Top the exposed dough all around with Monterey Jack cheese piling the cheese up if necessary and then press the cheese into the sides of the skillet creating about a 1/2 inch high cheese wall around the skillet. Cover the sauce with the mozzarella cheese. Place the pizza into the oven on the lowest rack and bake for 25 to 30 minutes until it starts to look really browned. If not as browned a desired, put the skillet with pizza over medium heat for up to 5 minutes checking the browning frequently. Remove pizza from skillet and place on wire rack to rest for 10 minutes.
