Oyster Po Boy Sandwich Recipe

Oyster Po Boy Sandwich Recipe uses oysters, buttermilk, hot sauce, cornmeal, bread crumbs, nutmeg, oil, lettuce, lemon juice, pickle brine, sumac, garlic powder, and cayenne and black pepper in creating this tasty oyster po boy sandwich recipe.


INGREDIENTS
2 dozen raw oysters
1/2 cup buttermilk
2 tsp hot sauce
3/4 cup each white cornmeal, fine ground and Panko bread crumbs
1 tsp grated nutmeg, fresh
oil, for frying
For Slaw and Sandwich:
1 head iceberg lettuce
1 tbsp hot sauce
4 tsp lemon juice
2 tsp dill pickle brine
1/4 tsp sumac OR
1/4 tsp + 1/8 tsp lemon pepper seasoning
1/4 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp each cayenne pepper and black pepper
1/2 tsp dried parsley
1 tbsp Dijon mustard
1/2 cup mayonnaise
4 6-inch Banh Mi rolls


DIRECTIONS
1: Soak oysters in mixture of buttermilk and 2 tsp hot sauce, in refrigerator, for 30 minutes to 1 hour. Meanwhile combine cornmeal, bread crumbs, and nutmeg and mix well. Place about 4 inches of oil into a heavy bottom pot and heat oil to 360°F. While oil is heating, drain oysters in a colander. Place individual oysters into the cornmeal mixture and turn to coat well. Place oysters onto a wire rack to hydrate.
 
2: Place 1 tbsp hot sauce, lemon juice, pickle brine, sumac, garlic powder, kosher salt, cayenne and black pepper, parsley, Dijon mustard, and mayonnaise into a large bowl and mix well to combine. Shred lettuce and place into slaw mixture. Toss to coat lettuce with slaw mixture.
 
3: Cut whole Bahn Mi rolls from one end to the other with a from top to bottom slice but do not cut all the way through. Separate halves of the rolls and place under oven broiler to toast slightly. Don't burn them. Place oysters into hot oil, 5 or 6 at a time and cook for 1 1/2 minutes to 2 minutes. Under cooking is better than over cooking. Removed cooked oysters to a wire rack. Repeat until all oysters are cooked.
 
4: (Note: Banh Mi rolls are a soft exterior Vietnamese roll. If not available, use the softest exterior rolls you can find.)Place lettuce slaw mixture into the buns and top with 5 or 6 fried oysters. Serve and enjoy.
