Sour Cream and Onion Potato Salad

Sour Cream and Onion Potato Salad uses Yukon gold potatoes, sour cream, mayonnaise, salt and pepper, garlic powder, scallions, celery, and chives in creating this outstanding potato salad recipe.

INGREDIENTS
|
2 lbs. Yukon gold potato, peeled and cut into 2-inch chunks
|
1/2 cup sour cream
|
1/4 cup mayonnaise
|
1 tsp table salt
|
1/2 tsp black pepper
|
1/2 tsp garlic powder
|
2/3 cup scallions, chopped
|
1/2 cup celery, chopped, thinly sliced
|
2 tbsp chives, thinly sliced (optional)
|

DIRECTIONS
|

Cut the potatoes into quarters and place in a large saucepan. Cover the potatoes with cool water; bring to a boil.

Reduce the heat to medium-low and simmer until the potatoes are just tender, 17 to 20 minutes. Drain the potatoes and cool slightly.

In a large bowl, stir together the sour cream, mayonnaise, salt, black pepper, and garlic powder. Add the chopped potatoes, scallions, and celery to the sour cream mixture; toss gently to coat. Spoon the potato salad into a serving bowl; garnish with the chives, if desired.
