Beef Liver Onions and Mashed Potatoes Recipe

Grilled Beef Liver with Onions and Parmesan Mashed Potatoes Recipe uses beef liver, onion, red potatoes, Parmesan cheese, buttermilk, and chives in creating this very tasty grilled beef liver recipe.

INGREDIENTS
|
1 lb beef liver
|
1 medium onion, sliced
|
Cooking oil
|
5 medium red potatoes
|
1 1/2 tbsp Parmesan cheese
|
1/4 cup buttermilk
|
1/8 cup chives, chopped (optional)
|
1/2 tsp salt
|
1 pinch black pepper
|
|
|

DIRECTIONS

Place potatoes in a large pot and cover with an inch of water; bring to a boil, reduce heat, simmer and cook until fork-tender, about 30 minutes. Drain and return potatoes to pot.

Mash potatoes with a potato masher. Stir in remaining ingredients and mix well to combine. Yields about 2/3 cup per serving.

While potatoes are cooking, head a skillet over medium high heat. When skillet is heated, spray inside of skillet heavily with cooking spray. Add onions and cook, stirring occasionally, until the onions are wilted and slightly browned.

Spray a charcoal grill grate or a grill pan with cooking spray over medium hight heat. Add the liver and cook for 3 minutes, turn liver over, and cook for 2 minutes. Repeat cooking and flipping every 2 minutes until the liver reaches and internal temperature of 165°F. Serve liver with mashed potatoes and grilled onions.
