Thai Shrimp and Noodles Salad Recipe uses lime juice, soy sauce, chili garlic sauce, sugar, canola oil, cooked shrimp, rice noodles, English cucumber, carrot, and peppermint leaves in making this tasty Thai shrimp salad recipe.

INGREDIENTS
|
|
2 tbsp fresh lime juice
|
|
1 1/2 tbsp less sodium soy sauce
|
|
2 tsp chili sauce (garlic)
|
|
1 tsp sugar
|
|
1 tsp canola oil
|
|
1 lb. cooked shrimp, medium, peeled and deveined
|
|
2oz packaged rice noodles, stick noodles
|
|
1/2 medium English cucumber, cut into matchstick strips
|
|
1 cup carrot, shredded
|
|
2 tbsp peppermint leaves, chopped (optional)
|
|
|
|
|
|
|
|
|
|
|
|
|

DIRECTIONS

1:
To make dressing, whisk together lime juice, soy sauce, chili-garlic sauce, sugar, and oil in small bowl.

Place shrimp in large bowl. Add 1 tablespoon dressing and toss to coat.
|
|
|
|
3:
Meanwhile, prepare noodles according to package directions. Drain, rinse with cold water, and drain again.
|
|
|
|
4:
Add noodles, cucumber, carrots, mint, and remaining dressing to shrimp and toss to coat.
