DIRECTIONS
1:
Heat about 3 inches of oil in a pot large enough to hold the fillets, to 370°F. The temperature will drop quickly when fillets are added, so turn the heat up and try to maintain 350°F.

2:
While oil is heating, combine flour, cornmeal, and baking powder and mix well. Beat the egg in a large bowl and then add buttermilk to combine.
3:
Plastic bags such as those in the produce section of groceries work very well in coating the fillets with the flour mixture. Dip the fillets into the egg mixture and drain any excess mixture. Place fillets into the flour mixture, one at a time, and coat well with the flour mixture.
4:
Place breaded fillets into the hot oil and cook for 4 minutes. Quickly remove from the oil and place on paper towels. Build the sandwiches using items for serving, as desired.
