Caramelized Onions

Caramelized Onions Recipe sautees sweet onions seasoned with butter, thyme, sherry wine vinegar, kosher salt and ground black pepper to create a side dish or condiment for any meat dish.
INGREDIENTS
2 T olive oil
2 T unsalted butter
2# yellow onions, sliced in 1/2 rings
1/2 t fresh thyme leaves
2 T sherry wine vinegar
1 t Kosher salt
1/2 t ground black pepper
DIRECTIONS
1:
Heat olive oil and butter in a large shallow pot. Add onions and thyme and toss in oil. Place lid on pot and cook over med-low heat for 10" to sweat the onions.

Remove lid and cook for 25-30 minutes, stirring occasionally until onions are caramelized and golden brown. Add vinegar, salt and pepper for 2 minutes, scraping brown bits from pot.
