Texas Style Cocktail Ribs

Texas Style Cocktail Ribs Appetizer Recipe bakes pork rib-lets which are smothered with a sauce of garlic, red chiles, cilantro, cumin, sugar, Worcestershire Sauce, chili sauce, catsup and vinegar resulting in this tasty pork rib recipe.

INGREDIENTS

8 pounds country-style pork
|
SAUCE
|
3 cloves garlic, chopped
|
2 small hot dried red chiles
|
1 tablespoon chopped cilantro (optional)
|
1 teaspoon ground cumin
|
1 teaspoon salt
|
1/4 cup brown sugar
|
2 tablespoons Worcestershire sauce
|
2 cups chili sauce
|
2 cups tomato catsup
|
2 cups white vinegar
|
Few drops hot-pepper sauce
|

DIRECTIONS

Preheat oven to 325° F. TO PREPARE THE SAUCE: Combine garlic, chiles, cilantro (if used), salt, sugar, and Worcestershire sauce in a blender. Blend well.

In a saucepan, combine garlic mixture, chili sauce, catsup, vinegar and hot pepper sauce. Simmer 25 minutes, uncovered. Sauce will be thick and will thicken even more as it cools.

Place riblets in a large roasting pan. Pour sauce evenly over the ribs. Cover and bake 2 hours.

Preheat broiler or prepare a charcoal fire. Grill ribs for 6 to 8 minutes or broil for 3 to 4 minutes, turning them once and basting with sauce until they are browned and crusty. Charcoal grilling gives the most authentic flavor.
