DIRECTIONS
1:
Sprinkle yeast over the water in large bowl of electric mixer. Add 1 tablespoon of the sugar. Let stand until yeast is soft (about 5 minutes). Add the remaining sugar, milk, salt, and butter. Add 4 cups of the flour. Mix to blend, then beat at medium speed until smooth and elastic (about 5 minutes). Beat in egg. Then stir in about 1 1/2 cups more flour to make a soft dough.
2:
Turn dough out onto a board or pastry cloth coated with some of the remaining 1/2 to 1 cup flour. Knead until dough is smooth and
satiny and small bubbles form just
under surface (8 to 10 minutes), adding just enough flour to prevent dough from being sticky. Turn dough in a greased bowl.
Cover with plastic wrap and a towel. Let rise in a warm place until doubled in bulk (about 1 hour).
3:
Punch dough down. Knead into a smooth ball; let rest for 10 minutes. Divide into 24 equal pieces. Roll each on a lightly floured surface
either into a ball (for hamburger buns) or into a strand 6 inches long (for hot dog buns).
4:
Place rolls well apart on greased baking sheets. If making hamburger buns, flatten each ball to a circle about 4 inches in diameter. Let rise until almost doubled in bulk (about 30 minutes). Preheat oven to
400° F. Brush rolls lightly with melted
butter. Bake until golden brown (15 to 20 minutes). Transfer to wire racksto cool. Split when cool.
