Blackberry Upside Down Cake

Blackberry Upside Down Cake Recipe combines blackberries with butter, brown sugar, orange rind, flour, sugar, egg, vanilla and milk to create this flavorful and tasty upside down cake.

INGREDIENTS
|
3 tsp. melted butter
|
1/3 cup packed brown sugar
|
1 1/2 tsp. grated orange rind
|
2 cups fresh (or frozen) blackberries
|
1 1/4 cup all-purpose flour
|
1 1/2 tsp. baking powder
|
1/4 tsp. salt
|
2/3 cup white sugar
|
2 Tbsp. softened butter
|
1 egg
|
3/4 tsp. vanilla
|
1/2 cup milk
|
|

DIRECTIONS
|
1:
Preheat oven to 350°F. Spread the 3 tsp. of melted butter in bottom of 9” round cake pan
Sprinkle evenly with brown sugar, then orange rind and blackberries. Combine flour, baking powder and salt in a mixing bowl.

In another bowl beat white sugar into softened butter. Add egg and vanilla and beat well. Alternate adding the flour mixture into creamed butter/sugar mixture with the milk (start and end with flour). Spoon batter over berries.

Bake at 350°F for 40 minutes. Cool in pan on wire rack for 5 minutes.

Loosen cake edges with knife. Invert cake onto plate.
