Pulled Beef Sandwiches

Pulled Beef Sandwiches Recipe is a great way to make mouth-watering beef sandwiches by slow cooking chuck roast in beef broth with bell peppers and onions and serving on sandwich rolls with provolone cheese to create this pulled beef sandwich recipe.

INGREDIENTS
|
1 beef chuck roast (about 3 to 4 lbs.), cut into quarters
|
1 c. beef broth
|
3 lg. bell peppers, seeded and each cut into 6 wedges
|
2 med. onions, peeled and each cut into 6 wedges
|
8 long sandwich rolls, split
|
16 thin slices provolone or American cheese (about 8 oz.)
|
1/2 c. pickled jalapeno slices, drained and chopped
|

DIRECTIONS
|
1:
Rub beef with 1 tsp. salt and 1/2 tsp. black pepper; add to bowl of 7- to 8-qt. slow cooker along with broth. Scatter bell peppers and onions over beef. Replace lid; cook on Low 8 hrs. or until beef is very tender.

When ready to serve, arrange oven rack 5 to 6 in. from broiler heat source. Preheat broiler on high.

Transfer beef to lg. cutting board. When cool enough to handle, shred meat, removing and discarding fat. Strain vegetables from cooking liquid. Reheating first if necessary, divide meat and vegetables among rolls. Top with cheese and pickled jalapeno slices. Place sandwiches on lg. foil-lined jelly-roll pan and broil 2 to 3 min. or until cheese melts.
