Shrimp Cocktail Appetizer

Shrimp Cocktail Appetizer Recipe overs shredded lettuce with sauce of double (heavy) cream, mayonnaise, ketchup, Worcestershire sauce, small shrimp and lemon juice then garnishes with large shrimp to complete this shrimp cocktail appetizer recipe.

INGREDIENTS
|
4 tbsp double (heavy) cream, lightly whipped
|
4 tbsp mayonnaise, preferably home-made
|
4 tbsp tomato ketchup
|
1 to 2 tsp Worcestershire sauce
|
juice of 1 lemon
|
1/2 cos (romaine) lettuce or other crisp lettuce
|
1 lb cooked peeled prawns (shrimp)
|
salt, ground black pepper and paprika
|
6 large whole cooked prawns (shrimp) in the shell, to garnish (optional)
|
thinly sliced brown bread with butter and lemon wedges, to serve
|

DIRECTIONS
|

Place the lightly whipped cream, mayonnaise and tomato ketchup in a small bowl and whisk lightly to combine. Add Worcestershire sauce to taste, then whisk in enough of the lemon juice to make a really tangy sauce.

Finely shred the lettuce and fill six individual glasses one-third full.

Stir the prawns into the sauce, then check the seasoning and spoon the prawn mixture generously over the lettuce. If you like, drape a whole cooked prawn over the edge of each glass and sprinkle each of the cocktails with ground black pepper and/or paprika. Serve immediately, with thinly sliced brown bread with butter and lemon wedges.

COOK'S TIP: Partly peeled prawns make a pretty garnish. To prepare, carefully peel the body shell from the prawns and leave the tail 'fan' for decoration.
