Grilled Aubergine in Honey and Spices

Grilled Aubergine in Honey and Spices Recipe lightly browns sliced aubergine with olive oil before placing in mixture of olive oil, garlic, fresh ginger root, ground cumin, harissa, honey and lemon juice to create this delicious aubergine dish.

INGREDIENTS
|
2 aubergines (eggplants)
|
olive oil, for frying
|
2 to 3 garlic cloves, crushed
|
2 in. piece fresh root ginger, peeled and grated
|
1 tsp ground cumin
|
1 tsp harissa (search recipes)
|
5 tbsp clear honey
|
juice of 1 lemon
|
salt
|

DIRECTIONS
|

Preheat the grill (broiler) or a griddle pan. Cut the aubergines lengthways into thick slices.
Brush each aubergine slice with olive oil and cook in a pan under the grill or in a griddle pan. Turn the slices so that they are lightly browned on both sides.

Meanwhile, in a wide frying pan, fry the garlic in a little olive oil for a few seconds, then stir in the ginger, cumin, harissa, honey and lemon juice.

Add enough water to thin the mixture, then add the aubergine slices. Cook for about 10 minutes, or until they have absorbed all the sauce.

Add a little extra water, if necessary, season to taste with salt, and serve at room temperature, with chunks of fresh bread to mop up the juices.
Cook's Tip: Grilled blood oranges make an excellent quick accompaniment to this dish. Dip the halves or quarters in icing sugar and grill until just about to blacken. Then thread on to metal skewers.
