Minty Zucchini Linguine

Minty Zucchini (Courgettes) Linguine Recipe cooks dried linguine before tossing with browned zucchini (courgettes) and chopped mint then seasons all with salt and ground black pepper drizzling with garlic-infused olive oil.


INGREDIENTS
1 lb. dried linguine
4 small zucchini, sliced
1 small bunch of fresh mint, roughly chopped
5 tbsp garlic-infused olive oil
salt and ground black pepper


DIRECTIONS
1: Cook the pasta in a large pan of lightly salted boiling water for 10-12 minutes.
 
2: Meanwhile, heat 3 tbsp of the oil in a large frying pan and add the courgettes. Fry for 2-3 minutes, stirring occasionally, until they are golden.
 
3: Drain the pasta well and toss with the courgettes and chopped mint. Season with salt and pepper, drizzle over the remaining oil and serve immediately.
