Bacon Salad with Camembert Dressing

Bacon Salad with Camembert Dressing Recipe creates a delicious salad with olive oil, bacon, apple, romaine lettuce, and lemon juice drizzled with a dressing of sour cream, cider, Camembert cheese and cider vinegar.

INGREDIENTS
|
2 tbsp olive oil
|
1 eating apple, cored and chopped
|
2 oz. diced streaky (fatty) bacon slices, preferably dry-cured, diced
|
2 small heads cos or romaine lettuce
|
a squeeze of lemon juice
|
salt and ground black pepper
|
For the dressing:
|
2/3 cup sour cream
|
1 tbsp cider
|
2 oz. Camembert or similar cheese, chopped
|
a dash of cider vinegar
|

DIRECTIONS
|

Heat 1 tbsp of the olive oil in a large frying pan and add the diced streaky bacon. Cook over a medium heat until crisp and golden. Add the apple and cook gently for 1-2 minutes until golden brown and softened.

Tear the cos or romaine lettuce carefully into bite-size pieces.

To make the dressing, heat the ingredients together in a small pan over a low heat until smooth and creamy.

Toss the lettuce with the remaining oil and the lemon juice, season, then divide among four plates. Heap the warm apple and bacon on top, then drizzle over the dressing.
Variation: For a slightly tangier topping, replace the Camembert with a mild and creamy blue cheese, such as Cambozola.
