Unbelievable Venison

Unbelievable Venison Recipe is the marriage of bacon and venison, seasoned with lemon juice and garlic powder then touched by the smokey goodness of the grill which results in this tasty venison recipe.

INGREDIENTS
|
venison tenderloin (allow 1/4 lb. per person)
|
bacon strips (to match venison)
|
2 shakes meat tenderizer per slice
|
1/4 cup lemon juice
|
garlic powder, as desired to taste
|
1 or 2 toothpicks per venison roll
|
pastry brush for lemon juice
|

DIRECTIONS
|

(The key to this recipe, as to any venison recipe, is proper treatment of the meat. Mistakes in field dressing, aging, butchering, packaging and storage cannot be corrected in the kitchen.)

Slice tenderloin in strips 6 inches long, 2 to 3 inches wide and 3/8 to 1/4 inch thick. Brush lightly with lemon juice. Sprinkle with meat tenderizer and garlic powder.

Cut the bacon strips in halves crosswise and lay them out side by side. Lay a piece of prepared venison on a bacon strip and match up one end. Roll the venison and bacon from the unmatched end, bacon on the outside. Secure with toothpicks.

Place on gas or charcoal grill at medium heat for 8 to 10 minutes, turning occasionally to brown all over. Enjoy! (These may be successfully frozen and reheated in the microwave, so fix extras!)
