Country Ham and Asparagus Bake

Country Ham and Asparagus Bake Recipe combines ham, onion, bell pepper, asparagus, egg product, milk, flour, Parmesan cheese, tarragon and Cheddar cheese to create this delicious ham and asparagus dish.

INGREDIENTS
|
1 1/2 cups chopped fully
cooked ham
|
1 medium onion. chopped
(1/2 cup)
|
1/4 cup chopped bell pepper
|
1 package (10 ounces) frozen
asparagus or broccoli cuts
|
8 eggs or 2 cups fat-free
cholesterol-free egg product
|
2 cups fat-free (skim) milk
|
1 cup all-purpose flour
|
1/4 cup grated Parmesan
cheese
|
1/2 teaspoon salt
|
1/2 teaspoon pepper
|
1/2 teaspoon dried tarragon leaves
|
1 cup shredded Cheddar cheese (4 ounces)
|

DIRECTIONS
|
1:
Heat oven to 425°. Generously grease bottom and sides of a rectangular baking dish, 13 X 9 X 2 inches, with shortening or cooking spray. Sprinkle ham, onion, bell pepper and
frozen asparagus in baking dish.

Beat eggs, milk, flour, Parmesan cheese, salt, pepper and tarragon with fork or wire whisk in medium bowl until smooth; pour over ham mixture.

Bake uncovered about 20 minutes or until knife inserted into center comes out clean. Sprinkle with Cheddar cheese. Broil 3 to 5 minutes or until cheese is melted. Let stand 5 minutes before cutting.
