Corned Beef Hash

Corned Beef Hash Recipe creates a tasty hash using green pepper, red onion, chopped cooked potatoes, chopped cooked corn beef, basil, and eggs for a delicious one dish meal.

INGREDIENTS
|
Vegetable oil
|
1 medium green pepper, seeded and chopped
|
1 medium red onion, finely chopped
|
1/8 tsp. salt
|
2 c. chopped cooked potatoes
|
2 c. chopped cooked corned beef
|
1/4 c. basil leaves, chopped
|
4 eggs
|
Pinch black pepper
|

DIRECTIONS
|
1:
Preheat oven to 450°F. Lightly brush 4 individual baking dishes or 1 large skillet with vegetable oil.

In 12-in. nonstick skillet, heat 2 Tbsp. vegetable oil on med.-high. Add green pepper, red onion and salt. Cook 10 min. or until vegetables are almost tender, stirring occasionally.

Add potatoes and corned beef. Cook 5 min., stirring often.

4:
Stir in basil. Divide among prepared baking dishes. Top each with one egg and pinch of black pepper. Bake 13 to 15 min. or until desired doneness.
