DIRECTIONS
1:
Place an inverted saucer in the bottom of an oblong baking dish. Make slits in beef with a sharp knife and insert a thin sliver of garlic in each slit. Sprinkle roast with salt. Place roast, fat side down, on saucer in baking dish. Cover bones with a small piece of aluminum foil. Microwave, uncovered, for about 2 1/2 minutes per pound for rare, 3 1/4 minutes for medium.
2:
Remove pieces of foil. Turn ribs fat side up. Cover roast with a piece of waxed paper to prevent fat from splattering oven walls. Cook, covered, for about 2 1/2 minutes per pound for rare, 3 1/4 minutes for medium.
3:
Remove roast, insert a thermometer into heavy part of meat, making sure that it does not touch the bone.
4:
If reading is correct, cover roast tightly with aluminum foil and let stand at least 15 minutes to bring meat up to desired temperature and to make it easier to carve. If desired temperature has not been reached, remove thermometer and return meat to the oven for 1 to 2 minutes.
