Stuffed Onions with Kale

Stuffed Onions with Kale Recipe hollows out boiled whole onions then fills with mixture of cooked kale, butter, salt, pepper, nutmeg and bread crumbs before baking to create a tasty stuffed onion recipe.


INGREDIENTS
1 1/4 oz butter
14 oz frozen kale
salt, pepper, grated nutmeg
4 large onions
3/4 oz bread crumbs


DIRECTIONS
1: Melt 3/4 oz of the butter in a pan. Add the kale, which should be slightly thawed, and simmer over a low heat for I hour. Add the seasonings and remove the pan from the heat.
 
2: Meanwhile, bring a pan of salted water to the boil. Add the onions and simmer for 20 minutes, until tender. Remove the onions from the pan, drain them, and allow to cool slightly. Then cut the top off each onion and scoop out most of the insides. Chop the scooped-out onion and the lids, chop the kale, and mix.
 
3: Stuff the hollowed-out onions with this mixture. Grease an ovenproof dish and place the stuffed onions in it. Sprinkle the breadcrumbs over the tops of the onions. Divide the remaining butter into 4 pieces, and place 1 piece on top of each onion.
 
4: Place the dish on the top shelf of the oven and bake at 425°F for 15 minutes. Remove from the oven and serve at once.
