New York Style Pizza Dough

New York Style Pizza Dough Recipe uses milk, brown sugar, salt, shortening, cornmeal, olive oil, water, yeast and flour to create this icon pizza dough and if you live in NY use the local water.

INGREDIENTS
|
1 cup lukewarm water
|
2 Tbl milk
|
2 tsp brown sugar
|
1 tsp salt
|
1 Tbl shortening
|
1 Tbl cornmeal
|
1 Tbl extra virgin olive oil
|
1 package yeast
|
3 cups all-purpose flour or unbleached white flour
|

DIRECTIONS
|
1:
In a large bowl, combine water, milk, brown sugar, salt and shortening and mix well with an electric mixer on low for about 1 minute. Add cornmeal, olive oil, and yeast and continue mixing for another minute. Let it dough rest for 5 minutes.

Gradually add the remaining flour, mixing with your hands before adding more flour. Turn the dough out on a lightly floured surface and knead the dough for 8 to 10 minutes. (Knead the dough vigorously, don't be afraid of hurting the dough.)

Form the dough into a ball and place in a lightly greased covered bowl. Place the dough in a warm location (70° to 85°F), and let it rest for about 45 minutes. Push down the dough and make a 12 inch to 14 inch circle with your hands or a rolling pin.

Rub the olive oil on a baking sheet and place the dough on it. Let dough rest for another 45 minutes. Dough is now ready to make a pizza.
