Johnny's Raisin Bread

Johnny's Raisin Bread Recipe is loaded with swirls of cinnamon and full of great taste and uses flour, sugar, salt, yeast, vegetable oil, eggs, raisins, ground cinnamon and butter to create this wonderfully tasty raisin bread.

INGREDIENTS
|
4 to 4 1/2 cups all-purpose flour
|
1/2 cup sugar
|
1 tablespoon salt
|
2 packages regular active or fast-acting yeast
|
2 cups water
|
1/4 cup vegetable oil
|
2 eggs
|
1 cup raisins or more to suit taste
|
1 tablespoon vegetable oil
|
1/2 cup sugar
|
1 tablespoon ground cinnamon
|
vegetable oil
|
1 tablespoon butter or margarine, softened
|
2 - 9"x5" loaf pans
|

DIRECTIONS
|
1:
Place water, heated to 95° - 115°F in a bowl. Add 1 tsp sugar to water and stir to dissolve sugar. Sprinkle yeast on top of water and briefly stir yeast into water. Let stand for 5 minutes to activate the yeast. While yeast is activating, combine 1 tablespoon cinnamon and 1/2 cups sugar. Place cinnamon mixture into a shaker if available.

In a large bowl, add activated yeast, 1/4 cup oil, 1/2 cup sugar, 2 eggs and 1 tablespoon salt. Beat with electric mixer on low until well blended. Gradually add 1 cup flour while blending mixture with mixer on low. One mixture is blended and smooth, add 2nd cup of flour, repeat blending and then add 3rd cup of flour and blend until well mixed and smooth. Mix in enough additional flour, slowly, to make dough easy to handle.

Place dough on lightly floured surface; gently roll in flour to coat. Knead 8 to 10 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. (If desired, at this point, dough can be refrigerated up to 4 days.) Cover; let rise in warm place about 1 hour or until dough has doubled in size. Punch down dough. Place dough on floured surface. Divide flour into 2 equal sized portions of dough.

Grease each loaf pan with oil. Roll each portion of dough into 18"x9" rectangles. Spread 1/2 cup raisins over each rectangle of dough - press raisins into dough. Brush top of each rectangle with oil. Sprinkle 1/2 the cinnamon mixture over each rectangle. Beginning at 9-inch side, roll up each rectangle. Pinch edge of dough into roll to seal. Press each end with side of hand to seal; fold ends under loaf. Place loaves, seam sides down, in pans. Brush oil over loaves. Cover; let rise in warm place about 1 hour or until dough has doubled in size. Move oven rack to lowest position; heat oven to 375°F. Bake 30 to 35 minutes or until loaves are deep golden brown and sound hollow when tapped. Remove from pans to cooling rack. Brush butter over loaves; cool.
