Fried Zucchini with Parmesan

Fried Zucchini with Parmesan uses zucchini, salt and pepper, eggs, cornmeal mix, oil, and Parmesan cheese to make this delicious zucchini recipe.

INGREDIENTS
|
2 zucchini, cut into 1/2 in. slices
|
salt and pepper, to taste (or add once cooked)
|
1 cup cornmeal mix
|
oil, for frying
|
1/4 cup Parmesan cheese (optional)
|
2 eggs, beaten
|

DIRECTIONS

Note: this recipe is great with or without Parmesan cheese.

Heat, over medium heat, about 2 inches of cooking oil in cooking vessel large enough to accommodate zucchini slices laid side-by-side (may have to cook slices in batches.) Sprinkle zucchini with salt and pepper, or wait until after zucchini slices are fried to season with salt and pepper - personal preference.

If Parmesan cheese is to be used, mix cheese and cornmeal mix well. Beat two eggs, well.

Dip zucchini slices into beaten eggs and then into cornmeal mix. Dip and bread enough slices to fill cooking vessel with slices laid side by side. Add slices to hot oil. Watch slices and when the bubbling of the oil begins to subside, carefully flip slices over - a fork works great. When bubbling subsides again, the slices are done. Remove from oil and drain any excess oil on paper towels. Enjoy!
