Chilled Asparagus with Sesame Vinaigrette Recipe

Chilled Asparagus with Sesame Vinaigrette Recipe is a delicious side dish and uses asparagus, sesame oil, rice vinegar, soy sauce, sugar and toasted sesame seeds to create this tasty vegetable recipe.


INGREDIENTS
2 lbs. asparagus, trimmed
2 Tbls. plus 2 tsps. Oriental sesame oil
1 Tbl. plus 1 tsp. rice vinegar
1 Tbl. plus 1 tsp. soy sauce
1 tsp. sugar
Sesame seeds, toasted


DIRECTIONS
1: Cook asparagus in large skillet of boiling salted water until just crisp-tender, about 4 minutes. Drain.
 
2: Rinse with cold water and drain well. Pat dry with paper towels.
 
3: Arrange on platter.
 
4: Mix sesame oil, rice vinegar, soy sauce and sugar in small bowl. Season dressing to taste with salt and pepper. DO AHEAD: Asparagus and dressing can be prepared 1 day ahead. Cover separately and refrigerate. Spoon dressing over asparagus. Sprinkle with sesame seeds and serve.
