Meat Stuffed Manicotti

Meat Stuffed Manicotti Recipe cooks ground beef, spinach, onion and oregano in olive oil, then adds bread crumbs, egg and tomato paste to cook before stuffing manicotti shells, sprinkiling with Parmesan cheese, topping with mozzarella then baking.

INGREDIENTS
|
2 tablespoons olive oil
|
1/2 pound fresh spinach,
washed, dried, and finely
chopped
|
2 tablespoons chopped
onion
|
1/2 teaspoon salt
|
1/2 teaspoon oregano
|
1/2 pound ground beef
|
2 tablespoons fine dry bread
crumbs
|
1 egg, slightly beaten
|
1 can (6 ounces) tomato
paste
|
8 manicotti shells (two thirds
of a 5 1/2-ounce package),
cooked and drained
|
1 1/2 tablespoons butter, softened (optional
|
1 to 2 tablespoons grated Parmesan or Romano cheese (optional
|
Mozzarella cheese, shredded
|
|

DIRECTIONS
|

Heat olive oil in a skillet. Add spinach, onion, salt, oregano, and meat. Mix well, separating meat into small pieces. Cook, stirring frequently, until meat is no longer
pink.

Set aside to cool slightly. Add bread crumbs, egg, and 2 tablespoons tomato paste; mix well. Stuff manicotti with mixture. Put side by side in a greased 2-quart baking dish.
If desired, spread butter over stuffed manicotti and sprinkle with the grated cheese.

Spoon remaining tomato paste on top of the manicotti down the center of the dish. Sprinkle mozzarella cheese on top of tomato paste. Cover baking dish.

Bake at 425°F 12 to 15 minutes, or until mozzarella melts.
